Yesterday I started another batch of Limoncello. The recipe is from one of Debbie's craft books, "Get Crafty". Really, it's from a craft book. The first step is to mix the rind of a dozen lemons with Everclear, which is 151-proof grain alcohol. Everclear is nasty stuff, with more than 75% alcohol. There is actually a second variety, in 190-proof strength! Because of the way alcohol is distilled, that is evidently the maximum strength you can get. The 190-proof Everclear is illegal to sell in California, and even the 151-proof bottle has warnings not to drink it straight and is not available in some states and provinces.
The juice from the dozen lemons are in ice-cube trays in the freezer. In one month's time, the rind gets strained from the alcohol. The lemon ice cubes and some sugar syrup are added, and it sits for another month. Easy!
