The Mysterious Case of the Disappearing Brownies

I made these yummy brownies today and of course I can’t stop eating them. I have forgone all nutritional food intake today just so my daily calorie count remains in this stratosphere. Oh, did I tell you they’re low fat! Heh heh.
Recipe: Heart Smart Cooking for family and Friends – by Bonnie Stern
Nick Malgieri’s Fudge Brownies
1/2 cup cocoa
1 cup flour
1 tsp baking powder
1/2 tsp salt
2 tbls unsalted butter (at room temperature)
1 1/2 cups of sugar
2 egg whites
1/2 cup unsweetened applesauce
1 tsp vanilla
1/2 cup of dried cherries (optional)
_ sift cocoa, flour, baking powder and salt in medium bowl
_ in large bowl beat together butter and sugar, whisk in egg whites, applesauce and vanilla
_stir in flour mixture into butter/applesauce mixture until just combined
_line 8-inch pan with parchment paper and pour batter into pan
_bake in preheated oven at 350F/180C for 35 to 40 min
