Easy Peasy: Holiday Cookie Recipe #2

These cookies are a busy person's dream. They're called More Than S'mores and the recipe is from Bonnie Stern's Essentials of Home Cooking—which happens to be my very favourite cookbook.

1 lb of milk chocolate (I use dark chocolate instead)
2 cups miniature marshmallows
2 cups crispy rice cereal (Store brand is fine)
1 cup broken-up Graham wafers
1 cup toasted peanuts (I used walnuts because I hate peanuts)
1/2 cup of raisins, dried cherries of dried cranberries
1 oz white chocolate, melted

Step 1: cut up chocolate and heat in a large bowl (like the photo) over a pot of simmering water until just melted. Cool to room temperature.
Step 2: Stir in remaining ingredients except for the white chocolate
Step 3: Spoon mixture onto waxed paper in mounds
Step 4: Drizzle mounds with white chocolate
Refrigerate until firm and serve. Or freeze for another day if that's possible.
